Let me make a point here before we start. I am not a cook. I once saw a bumper sticker that said "The only thing domestic about me is that I live in a house". That's me. These recipes are very easy, and always someone else's.
Peach Crisp
August is the big peach season around here so I'm always trying to find a new, easy way to cook them. This is definitely the best one!
8 or 9 fresh ripe peaches
1 cup sifted flour
1 cup sugar
1/4 tsp salt
1/2 tsp cinnamon
1/2 cup soft butter (1 stick)
Wash & peel peaches. Slice & place in lightly buttered 8x8x2 dish. Sift
flour with sugar, salt, & cinnamon into medium size bowl. Cut in soft butter
until mixture resembles coarse corn meal. Sprinkle mixture evenly over peaches.
Bake 45 to 50 minutes @ 375.
Oil Field Potatoes
This is a recipe created by my daughter's grandfather, Calvin Ledgess. He used to make it while grilling steaks in (you guessed it) the oil field.
8 or 9 large potatoes
2 white or yellow onions
1 red onion
sliced jalapanos
extra sharp cheddar cheese
1 stick (1/4 cup) butter (not margarine)
celery salt
pepper
Cut potatoes into chunks, add onions and jalapanos. Shake on alot of celery salt
(that's the secret ingredient) and pepper. Mix. Lay it out in a row in the
center of 2 large sheets of heavy-duty aluminum foil. Cut the butter into slices
and place on top. Take the edges and roll up tight, folding ends up too. Place
on the grill with your steaks and cook until done, approx 20 minutes, depending
on the size of the potatoes. Place grated cheddar cheese on top and roll back up
for a few minutes so the cheese will melt.
Lazy Daisy Cake
My mom was given this recipe when she got married, 60 years ago.
2 eggs
1 cup sugar
1 tsp baking powder
1 cup flour
1/2 cup boiling milk
1 T butter
1 tsp vanilla
1/4 t salt
Beat eggs, add sugar, beat, add vanilla. Add flour, bp, salt. Add milk and
butter. Bake at 350 for 25 minutes.
Icing:
4 T butter
8 T brown sugar
2 T cream
1/2 cup coconut
Mix together and spread on hot cake. Place under the broiler just until it melts
and lightly browns. Watch it carefully because it burns easily!
Fudge
The only one easy enough for me to make.
2 T butter or margarine
2/3 c undiluted canned milk
1 1/2 c granulated sugar
1/4 t salt
2 c (4 oz) miniature marshmallows
1 1/2 c (9 oz) semi-sweet chocolate chips
1/2 c chopped pecans or walnuts
1 t vanilla extract
Combine choco chips, marshmallows, pecans & vanilla. Set aside. In a heavy
saucepan, combine butter, milk, sugar and salt. Bring to a boil over medium
heat, stirring constantly with a wooden spoon. Boil for 4 minutes, stirring
constantly. Remove from heat. Stir in remaining ingredients quickly. Pour into
foil-lined eight inch square baking pan; chill until firm.
Banana Nut Bread
Another of Mom's old recipes. When bananas are way too ripe to eat, they are perfect for this!
1/2 cup butter
1 cup sugar
2 eggs
3/4 tsp soda
2 cups flour
1 cup chopped nuts
3 very ripe bananas
Bake in a loaf pan at 325.
Quick Spicy Soup
This may sound nasty, but it's really good! It makes alot, but freezes well. Credit goes to my mom's hairdresser's stepdaughter.
1 lb ground round (or extra-lean
hamburger meat)
3 cans minestroni soup
2 cans ranch-style beans
2 cans Rotel tomatoes
2 cans spanish rice (optional)
Brown meat, add everything else & heat up!
Chili Rellanos
Ok, this is not really an Okie recipe. It's a California Mexican dish. I include this for all those Okies who seem to think that Chili Rellanos are supposed to be fried. Thanks to Jennifer's mom in Sacramento for this one.
2 cans (4oz ea) mild green chilies
3 cups (12 oz) shredded jack cheese
1 1/2 cups (6oz) shredded cheddar cheese
2 eggs
2 T milk
1 T flour
Cut chilies into thin strips. In a lightly greased 8in square pan, alternately
layer cheese and chilies (beginning and ending with cheese). Beat eggs, milk
& flour together. Pour egg mixture over layered ingredients and bake @ 375
for approx 30 minutes.
