Shrimp-Cheese Log
1 4 1/2-oz can shrimp In small strainer, rinse shrimp; drain well and set aside. In a small mixing bowl beat cream cheese, onion, mustard, the 1 teaspoon lemon juice, and ground red pepper on medium speed of electric mixer till nearly smooth; stir in shrimp. Cover and chill 1 hour or till slightly firm. Shape mixture into a 7-inch log; roll in pecans, then in parsley. Place log on serving dish and cover. Chill till serving time. Before serving, dip apple slices in lemon juice mixed with a little water. Arrange slices around cheese log. Makes about 1 log.
