HOT CEREALS

TIPS
- If you add ground flax seeds, you will add fiber, texture and substance, sort of like oatmeal.
- You can vary the taste by adding chopped nuts, a little fruit, various flavored sugar free syrups, flavoring oil or extract, cocoa powder, cinnamon & other spices, pureed pumpkin. You can even add a little Jello direct from the packet; this will add both flavor and substance.
- Enrich by adding butter, heavy cream, topping with whipped cream, flavored or not.
- Pump up the protein by adding your favorite protein powder.

Kitty's Flax Seed "Oatmeal"

2 Tbl flax seeds, measure then grind
1 tsp cinnamon
dash of Nu-Salt
1/2 tsp Stevia (you can use a teaspoon or two of Splenda instead)
5 walnut halves, chopped
5-6 Tbl hot water
Just mix all the dry ingredients together, then add the hot water & mix like crazy. Eat =-)

Stovetop Cream of "Wheat" (1 serving)

1/2 cup ricotta cheese
3 Tablespoons heavy cream
1 egg
1 teaspoon vanilla (optional)
AS to taste (start with 1 packet)

- Combine all ingredients in a small saucepan and whisk until smooth.
- On medium setting, whisk constantly, bringing the mixture just
to a boil.
- Continue to cook, just below the boiling point, until the mixture reaches the desired thickness.
- Pour into a bowl and garnish with cinnamon and freshly-ground nutmeg.

Luxury "Grits"

3 oz. Mascarapone cheese (1.5 g of carb total)
3 eggs (3 g of carb total)
2 TB heavy whipping cream (1-2 carb total)
1 tsp Sugar Twin
1-2 tsp of cinnamon
1 tsp vanilla extract
1 pat butter

- Combine cream, eggs and cheese in a saucepan over medium heat until melted, stirring constantly.
- Add cinnamon, AS and vanilla, stirring occasionally and allowing eggs to "seize" (in order to get the proper texture).
- Add butter and stir.
The texture should resemble poorly made grits (but not too runny).

Creme Brulee

2 cups heavy cream
4 egg yolks
1 teaspoon Splenda

- In the top of a double boiler heat 2 c. heavy cream (have an inch or so of water in the bottom, of course) over medium heat until hot. Stirring frequently is good. Boiling is bad. If you don't have a double-boiler, use a metal bowl set into a saucepan.
- While the cream is heating, beat 4 egg yolks until thick and lemon-colored. Beat in sweetener equivalent to 1/4 c. sugar (I use 2 packets of Ace-K and 3 of Splenda) and 1 tsp vanilla.
- Once the cream is hot, add 3/4 to 1 c of it to the yolks WHILE STILL BEATING THEM (this keeps them from getting cooked!). Then add the yolk mixture to the remaining cream in the top of the double boiler.
- Cook, stirring constantly and NOT BOILING, until it begins to thicken.
- Eat it right away OR pour into several smallish bowls or custard cups and cover with Saran Wrap. Refrigerate for several hours to set.

Hot Wheat Cereal

2 Tbl eggwhite powder
1 tsp xanthan gum
2 Tbl wheat bran
1 & 1/4 cups warm water
2 packets artificial sweetener
cinnamon -- to taste

- Combine dry ingredients and mix.
- Gradually add water to dry mix using wire whisk.
- Microwave in large bowl on high for two minutes, stirring halfway through. (It will fluff up).

16 Calories; trace Fat (8% calories from fat); 1g Protein; 7g Carbohydrate; 0mg Cholesterol; 9mg Sodium

Branacrisp Cereal

2 Bran-A-Crisp Crackers
2 tablespoons butter
1 tablespoon heavy cream
1 tablespoon sugar free syrup
3 splenda packets -- (3 to 4)
Cinnamon (optional)

- Crush bran-a-crisp crackers in a bowl.
- Add butter, heavy cream, syrup, splenda and cinnamon.
- Microwave 45 seconds.
- Top with a dab of cream cheese or whipped cream.

255 Calories; 28g Total Fat(96% calories from fat); 1g Protein; 2g Carbohydrate; 82mg Cholesterol; 240mg Sodium

Also, WiseChoice makes a product called "NotCereal" which has 1 carb but 1 gram fiber so basically cancels out. You can wisk it with hot broth to make gravy, or with maple syrup (low-carb kind) or cocoa powder and cream for a decent hot cereal. Available at www.low-carb.com as well as other sites.


COLD CEREALS

Piekinns' Flax Seed Granola
from Piekinns (!)

1 lb ground flax seeds
1 cup shredded coconut
1 cup thin sliced almonds
1 Tbl pumpkin pie spice
1/2 cup splenda
1 Tbl vanilla
6 egg whites
1/2 cup water

Mix dry stuff and wet stuff in separate bowls, then mix together.
Spread it in a jelly roll pan and bake untill compleatly dry at 250* for about 3 hrs.
Every hour while baking, take a fork and break up any large bits.
Cool completely before it is stored.

Crunchy Toasted Coconut Almond Cereal

6 Bran-A-Crisp Wheat Bran Crackers -- coarsely crushed
1/4 cup Unsweetened Coconut Shreds -- toasted
1/4 cup toasted almonds -- coarsely chopped
1/4 cup pecans -- chopped
dash cinnamon
1 teaspoon Splenda -- *see note

Notes with original recipe:
"Combine all ingredients. Keep in airtight container.
Makes approximately three 1/2-cup servings. Each serving has approximately 2 effective grams of carbohydrates.
Serve with your choice of half & half or heavy cream depending on the amount of carbs you want to add."

*Sweetener was not included in original recipe.

Priscilla's Cereal / Crunchy Snack

Kellogg's All-Bran **WITH EXTRA FIBER** (this lists 20 grams of carbs per serving, but 13g is FIBER and there is a
ZERO gram sugar count.

1/2 cup kellogg's all-bran with extra fiber
nuts of your choice
butter
cinnamon
unsweetened shredded coconut
artificial sweetener of your choice (powdered)

Spread the all-bran on a cookie sheet.
Melt a bit of butter and pour it over the all-bran.
Throw on some nuts and a bit of coconut.
Sprinkle cinnamon on top.
Bake at 350 for maybe 10 minutes or so, stirring once to mix it all up.
AFTER it comes out, sprinkle sweetener on it sparingly.

Best of all, one serving has 8% of the precious hard-to-get
potassium AND 52% daily fiber.

Low Carb Granola

I combined two recipes and came up with a delicious granola.

The original recipe was from bestfoods.com and it was basically all nuts and seeds. I added the All-Bran with extra fibre and it is wonderful.
If you like cereal, it is a good replacement. Or you can eat it as a snack.

2 cups All Bran with extra fibre
1 cup sliced almonds
1 cup pecan bits
1 cup pumpkin seeds
1 cup coconut pieces
1 1/2 cups unsweetened shredded coconut
cinnamon
splenda
about a half cup butter

spread it out in a large baking pan
pour melted butter over it
bake it at 350 for as long as it takes to get toasty and slightly dark
stir often (about every ten minutes to distribute the butter)
Remove from oven, let cool completely and store in jars

Right now this is my favorite food, at 5 carbs 1/2 cup, and it has fibre and potassium and other good things

Also, try TVP (Textured Vegetable Protein)
Usually you can find it in the bulk food section of your health food store. Sometimes they have it in the baking section, prepackaged (e.g., Bob's Red Mill).
It looks kind of like grapenuts cereal, tastes a bit like corn flakes.
