Belmont's Revenge Storyline
The following was taken from the Castlevania II : Belmont's Revenge Instruction Booklet.
"In the first Castlevania Adventure, the fearless vampire hunter Christopher Belmont fought toe-to-toe and wip-to-wing against the vampire king, Count Dracula. Belmont defeated the Count and destroyed his castle, but unfortunately Dracula used what remained of his magical powers to transform his body into mist, thereby making good his escape. However, his powers were so depleted that he was left unable to transform back into "human" form. The Count decided to wait and rebuild his dark forces. Deep inside his black heart he swore revenge on Christopher Belmont and his family.
Fifteen years later, a ceremony was held in the town of Transylvania. The son of Christopher Belmont, Soleiyu Belmont, had come of age, and it was time for the title of vampire hunter to be passed down to him. The ceremony was to commemorate this occasion. All the citizens of Transylvania rejoiced, hoping that the father-son team of vampire hunters would bring peace to the region forever.
But on the morning after the ceremony, it was discovered that Soleiyu Belmont had vanished into thin air. The ceremony was the chance Dracula had waited for. Soleiyu received great sacred power in the ceremony to mark his adulthood, and Dracula used his last bit of magic to turn Soleiyu's powers against him, transforming him into a terrible demon. Then, aided by the Soleiyu-demon, Dracula was able to assume human form once again. That evening, to the northeast of the village, the earth shook with a thunderous roar and four ominous castles appeared. And, hidden in a lake at the center of these castles, was another castle - the new lair of Count Dracula!
Horrified to learn that his son had been altered by the forces of evil, Christopher Belmont determined to save Soleiyu and breath the ambitions of the Count. He journeyed to the new castles, each ruled by a different power of darkness placed there by the Soleiyu-demon to stop anyone who would tamper with the mystic spell Dracula had cast upon him. Nevertheless, in order to save the village of Transylvania and free his son, Christopher had no choice but to go and fight once again."

Obviously Christopher Belmont once again rose victorious against the evil Count Dracula and saved his son, Soleiyu who went on to continue the Belmont bloodline. Some think that Soleiyu is the grandfather of legendary vampire hunter, Richter Belmont, who defeated Dracula in the Castlevani : Dracula X games.
As I was searching for specific dates for the battles Christopher Belmont had against Dracula, I discovered the site, The Castlevania Saga, which has an excellently laid out timeline. Taken from there I found these possible dates for the battles that took place between Christopher Belmont and Dracula. (Only the dates were taken from The Castlevania Saga site; the notes after were written by me.)
1576 - Castlevania Adventure takes place. Dracula has his first 100 year resurrection and is met by Christopher Belmont. The epic battle begins once again with Christopher defeating Dracula. Castlevania is destroyed yet a bat is seen fleeing the crumbling building leaving Christopher to wonder if Dracula escaped.
1591 - After 15 years, Christopher must have thought that he had successfully destroyed the vampire, Dracula,years before and that the bat leaving the castle was just another one of Drac's goons. Then when his son mysteriously disappears the day after his ceremony into manhood, Christopher is outraged. With revenge on his mind, he storms to the four castles that have mysteriously appeared, and whips up the powers of darkness in each one. Castlevania suddenly appears in the center of a hidden lake. This doesn't stop Christopher as he enters Castlevania once again for the final time. In an awesome duel, he faces his son in battle (maybe the first time a Belmont had to face another Belmont in a duel), defeats the demon possessing him, and successfully saves him. He goes on to fight Dracula and makes sure that he stays down...at least until the next centennial resurrection.
I, personally, hope that the story didn't end there. I would like to think that Christopher and Soleiyu went on to embark on a series of adventures against Dracula's other goons and other forces of darkness before Christopher retired, and Soleiyu married so he could continue on the Belmont bloodline.
